- Viticulture: Organic (AB), no spraying, no chemicals, no copper or sulfur, minimal intervention beyond pruning and occasional mowing between the rows, integrated pest management.
- Vinification: Hand harvested, manually sorted and left to further ripen for 2-12 weeks. Washed, crushed, pressed, and settled. 5+ month ambient yeast fermentation in tank, secondary fermentation in bottle. No fining, filtered only when required. No added SO2.
